Now led by Jean-Luc Fourrey, the estate has embraced a more sustainable future, ditching herbicides, cutting back on chemicals, and boosting biodiversity through the use of organic fertilisers. That commitment to the land has earned them the prestigious HVE 3 (High Environmental Value) certification. Grapes are harvested at peak ripeness and rushed to the winery to lock in freshness. Theyโre gently pressed with pneumatic presses, and the leftover pomace is repurposed at a distillery - nothing wasted. Fermentation happens in 350- to 500-liter barrels or amphorae, powered by wild yeasts. After undergoing malolactic fermentation, the wine rests on its fine lees before a final filtration and bottling, preserving purity, character, and a sense of place in every bottle.
