Chablis
Chablis is a distinctive white wine from northern Burgundy, made exclusively from Chardonnay. Its cool climate and limestone-rich soils help produce wines known for freshness, precision and bright acidity, often with flavours of citrus, green apple and subtle mineral or chalky notes rather than the richer, more overtly oaked style associated with some other parts of Burgundy.
At Spy, our Chablis selection focuses on distinctive bottles from carefully chosen small producers, from crisp, youthful wines with citrus and saline freshness to more concentrated examples with greater texture, depth and ageing potential. Chablis is one of the clearest expressions of how place can shape Chardonnay.

Chablis Buying Guide
Chablis is made exclusively from Chardonnay, but its cool northern Burgundy climate gives it a very different character from many richer styles of the grape. Fresh acidity, citrus fruit and a distinctive mineral or chalky quality are common, while the best wines can gain texture and complexity with age. Producer, vineyard and classification all play an important role in shaping the final style.
What style of Chablis do you enjoy?
For a lighter, fresher style, look for Chablis with bright citrus, green apple and a clean, mineral finish. More concentrated wines can show greater texture, depth and savoury complexity, particularly from better vineyard sites and more ambitious producers. Some examples are made entirely in stainless steel, while others may use older oak to add subtle texture rather than obvious woody flavour.
Choosing Chablis for food
Chablis is especially good with seafood because its acidity and freshness complement delicate flavours without overwhelming them. Oysters, shellfish, grilled fish and sushi are classic matches, while richer examples can work well with roast chicken, creamy fish dishes and soft cheeses. Its clean, dry style also makes it a versatile aperitif.
Understanding Chablis classifications
Chablis is organised into several appellation levels, from Petit Chablis and Chablis through to Premier Cru and Grand Cru. These classifications reflect vineyard location and potential rather than a guaranteed level of quality. Producer and vintage still matter greatly, but the higher-ranked sites generally offer greater concentration, complexity and ageing potential.
Chablis FAQs
What grape is Chablis made from?
Chablis is made exclusively from Chardonnay. Its cool climate and distinctive soils give the grape a fresher, more mineral and restrained expression than many warmer-climate Chardonnay wines.
What is the difference between Chablis and Chardonnay?
Chardonnay is the grape variety, while Chablis is a wine region in northern Burgundy where Chardonnay is the only permitted white grape. Chablis therefore refers to a particular regional style of Chardonnay, typically associated with high acidity, citrus fruit and mineral character.
Does Chablis use oak?
Some Chablis is made entirely in stainless steel to preserve freshness and purity, while other producers use older oak or a combination of oak and tank. Oak is usually used more subtly than in many richer styles of Chardonnay, with the aim of adding texture rather than strong vanilla or toast flavours.
Can Chablis age?
Yes. Many basic Chablis wines are best enjoyed relatively young for their freshness, while better examples, especially Premier Cru and Grand Cru, can develop considerable complexity with bottle age. As they mature, the wines can gain more savoury, nutty and honeyed characteristics.
