Calvados

Calvados is an apple brandy from Normandy, made by fermenting cider and distilling it into eau-de-vie. It is aged in oak barrels, which enhances its flavour with notes of baked apple, spice, and vanilla, deepening the longer it spends maturing. Calvados is often sipped neat or enjoyed as part of the traditional French "trou normand" (a small drink between courses).
