Pygmalion is made from Chardonnay grown in the Crouch Valley in Essex. The grapes are whole-bunch pressed directly into Burgundy barrels, where fermentation takes place naturally with indigenous yeasts. The wine then matures for 20 months in barrel with frequent lees stirring, building texture, depth and complexity while retaining freshness.
