Method Magic Blackbook Winery has been shaking up English wine since 2017, when Sergio Verrillo and Lynsey Verrillo set up their urban winery beneath the railway arches of Battersea. Working exclusively with growers a short drive from London, they bring hand-picked Pinot Noir from Clayhill Vineyard in Essex into the city to craft I’d Rather Be a Rebel Rosé. The grapes undergo a short cold soak before pressing, ferment naturally in old French oak barrels with indigenous yeasts, complete malolactic fermentation, and then spend around eight months ageing on lees in tank and barrel, followed by further bottle ageing before release. There’s a focused, minimal-intervention process designed to showcase the character and texture of English cool-climate fruit.
