I'd Rather Be a Rebel is made from Pinot Noir grown at Crows Lane Estate in Essex. The grapes are hand-picked into small crates and brought to Blackbook's Battersea winery, where they undergo a brief cold soak before being gently pressed and fermented in seasoned French oak. The wine then matures for 18 months on lees in a combination of tank and barrel, followed by a further six months in bottle before release.
