Method Magic Hailing from a railway arch in Battersea, Blackbook Winery is the brainchild of winemaker Sergio Verrillo and his partner Lynsey, crafting small batch English wines with a rebellious, hands on approach. Their experimental Fragments of Time Sauvignac (2022) comes from Essex grapes, fermented on wild yeasts and aged seven months in old Burgundy barrels with regular lees stirring, creating a textured, expressive white. With only around 80 cases made, every bottle is a rare taste of Sergio’s global winemaking experience and fearless cool climate creativity, showing just how exciting English wine can be.
