Method Magic It is aged for This is Albariño with sand between its toes. Monte Pio is Pablo Martinez’s one-man project in Rías Baixas, grown on 25-year-old vines rooted in beach-adjacent soils. Wild fermented, split between steel and old-school tinaja amphora, then five months on fine lees. The Atlantic shows up loud and clear: saline, clean, and stripped back to the essentials. Natural, amphora-raised, and cut with precision.. Extended lees contact, 80% in stainless steel, 20% in earthenware jars, before blending and bottling.
