Agave

Agave is the foundational ingredient for spirits like tequila and mezcal, with different species (like Blue Weber agave for tequila) producing distinct flavours. Native to Mexico, agave plants take several years to mature. Their "pina" (hearts) are then hand-harvested, fermented and distilled to create the white spirit. Maturation in barrels (often ex-Bourbon from neighbouring USA) adds richness of different depths.
