This mezcal is really awsome - made with a chicken breast in the third distillation! Its smokey taste is Scotch-like. Made in the village of Santa Catarina which has views of flat, open valley lined with trees. Clay stills with bamboo tubing are used to distill this mezcal three times. It uses plums, mountain apples, pinaeapples, almonds, red plantains and, yes, achicken breast. Made as a celebration of mezcal.
Try in a: Champagne flute or small wine glass and sip, like it is a whisky or brandy.
