A crisp, bone-dry Andalusian white - an exceptional example of the trend for 'unfortified Sherry', i.e. made from the classic grape, Palomino, but made like a still white wine. Sotovelo goes above and beyond on this one, though, ageing the wine under a veil of flor, like the typical 'Fino' Sherry style. This contributes to a savoury layer of of toasted bread, almonds, and a persistent saline mineral character. This contrasts wonderfully with bright notes of citrus zest and green apple balanced with delicate hints of nectarine - it's a real testament to the Palomino grape and the incredible region of Andalusia. The wineโs texture is refined and fresh, with an umami-leaning depth and a clean, dry finish that pairs beautifully with olives, seafood, cured meats, and Mediterranean cheeses.

Method Magic A groundbreaking white wine from Palomino grapes grown on the chalky albariza soils of Pago Balbaina in El Puerto de Santa Marรญa, Jerez, Andalucรญa, where local climate and traditional terroir combine to shape its unique style. Instead of fortifying the wine like a classic sherry, Sotovelo is aged for about eight months under a natural veil of flor yeast in wooden barrels, a bioprocess usually reserved for fino and manzanilla, that gives it remarkable freshness, complexity, and dryness while letting the indigenous grape and terroir shine. Behind the project are Charles Rolls (co-founder of Fever-Tree) and Thomas de Wangen (CEO and local visionary), who championed the idea of translating Jerezโs flor-ageing magic into a still wine, with Raรบl Moreno serving as technical director/winemaker and guiding the minimal-intervention craft that sets this wine apart.
