Method Magic From the hillside vineyards of Gramogliano, near the Slovenian border, Perusini produces Ribolla Gialla with great care and minimal intervention. Grapes are hand-harvested and gently pressed at low temperatures, then fermented in stainless steel to preserve their aromatic purity. The wine is aged for six months on fine lees—adding texture without losing precision—while avoiding malolactic fermentation to retain its natural acidity and mineral character. Made from 100% Ribolla Gialla grown in ponca (Eocenic loam), the vines are organically farmed and Guyot-trained, with modest yields to ensure concentration. Centuries of cultivation and clonal selection have shaped this wine, long regarded as Perusini’s signature white, and among the most elegant of the Friulian hills.
