Vanilla, caramel and toffee lead the way, with a touch of sweet corn and plenty of youthful oak. Toasted flavours develop across the palate before a warming, spicy finish. At 50% ABV it has real intensity, but the corn-led spirit gives it a generous underlying sweetness.
Debt Collector starts with a mash of predominantly corn alongside barley and rye, fermented using Kentucky Bourbon yeast and twice distilled in a copper pot still at Doghouse Distillery in Battersea. The spirit is then matured for one year in charred virgin American oak before being reduced to 50% ABV for bottling. It follows an American whisky-inspired production approach, but at only one year old it cannot legally be sold as whisky in the UK.
