Method Magic Château Monteils is a small, family-run estate in Preignac, Sauterne, Bordeaux. Approximately 12 hectares of vines are planted, mainly Sémillon, Sauvignon Blanc, and Muscadelle, on gravelly and clay-limestone soils. The ground and climate are ideal conditions for developing Botrytis cinerea (“noble rot”) that is essential for classic Sauternes sweetness. The grapes are harvested entirely by hand in multiple passes through the vineyards in autumn. To pick only fully botrytised, concentrated berries, a process that can extend over weeks due to the strict selection is required. After pressing, fermentation is carried out slowly. Traditional oak barrels or temperature-controlled vats are used. Fermentation stops naturally with residual sugar retained, and the wine is then aged for extended periods in French oak. The wine is then further aged in tanks or barrels before bottling. This traditional process of ‘Elevage’ helps balance the luscious sweetness with the wine’s freshness and complexity. The estate has been in the same family since the 19th century and is currently managed by Marie-Christine Cousin and her parents.
