Fresh and energetic, with citrus and gooseberry at the centre alongside white pepper and a gently savoury, yeasty character. There is plenty of fizz, but also real texture and depth from barrel fermentation and extended contact with the lees. Bright acidity keeps the richer elements in check, making this an expressive and unusually characterful English sparkling wine.
GMF is made from Seyval Blanc grown at Yew Tree Vineyard in Oxfordshire. The grapes are whole-bunch pressed, with the free-run juice fermented in a combination of stainless steel and ex-Burgundy barrels. The wine undergoes a second fermentation in bottle using the traditional method and is then left undisgorged, retaining the lees in the bottle beneath its crown cap. The result combines the precision and persistent bubbles of traditional-method sparkling wine with the cloudy, textured character associated with col fondo wines.
