Method Magic Tucked beneath a London railway arch, Blackbook Winery is the daring brainchild of Sergio Verrillo and his wife Lynsey, a place where small batch English wines are crafted with fearless minimalism and a deep respect for the vineyard. Their wild red, Drums>Space, comes from the South Bank Vineyard in Essex, a young but bold site planted in 2017, where multiple grape varieties grow together in a vibrant field blend. The grapes are fermented naturally in open-top fermenters, coaxed to life by indigenous yeasts, then aged in Burgundy oak barrels and bottled unfined and unfiltered, letting every drop express pure vineyard character with silky tannins, earthy depth, and lively freshness. Since launching in 2017, Sergio has fused his global winemaking experience with London grit, creating wines that are unapologetically bold, full of personality, and proof that English reds can both thrill and mesmerize from the first sip to the last.
