The Heart Cut #16 Fielden Rye

A spice sensation from one of the most talked-about distilleries of the year. Fielden emphasises the raw material, growing diverse grains in clover to support biodiversity and avoiding all artificial chemicals. Cask “292”, The Heart Cut’s choice for bottling is a 100% rye whisky from England, finished in an ex-oloroso sherry barrel from beside the sea. Honeycomb, banana and walnuts all support lashings of salted caramel. Pretty unusual, meet incredibly delicious.

Method Magic This bottle is special in lots of ways. The rye was farmed organically, with a quarter of the grain floor-malted at Warminster maltings. Distillation took place in Fielden’s original still in Oxfordshire - they’re now moving up to Yorkshire, so this is a little piece of the beginning. And, after maturation in new American oak, this whisky was finished for 2 years and 4 months in a 600 litre oloroso sherry barrel from a 45 year-old solera in Sanlucar de Barrameda. Only 1109 bottles made. 🥃
