Method Magic Hand-harvested to capture only the finest clusters, the grapes are swiftly transported to the winery to preserve their fresh, vibrant character. Once there, the fruit is destemmed and placed in stainless steel tanks and open-top vats for a 4–5 day cold soak, with 15% whole clusters added to enhance depth and complexity. Fermentation unfolds at 23–25°C, with gentle extractions over 8 to 12 days, followed by a 2 to 3-week post-fermentation maceration, tailored to the expression of each lot. After fermentation, the wine is moved straight into untoasted oak foudres and concrete egg tanks for malolactic fermentation and the start of its evolution. It’s then aged for 10 months, with a further 6 months in bottle before release—resulting in a wine with structure, purity, and unmistakable character.
