Method Magic Only the Best Grapes Make the Cut. Each bunch is handpicked at peak freshness with only the finest fruit selected. They're rushed to the winery, destemmed, and meticulously sorted, bunch by bunch. The top-tier grapes go into open wooden vats for a cold maceration of 7 to 9 days—gently drawing out colour and aroma. Fermentation follows at a steady 25°–27°C, with soft extractions over 8 to 12 days. Then, the wine macerates for another 15 to 18 days, fine-tuned by daily tastings. From there, it moves straight into French oak barrels and untoasted foudres, where it undergoes malolactic fermentation and ages gracefully for 17 months.
