Method Magic Each bottle begins with a touch of human hands. Grapes are handpicked at peak ripeness and gently delivered to the winery. There they’re delicately destemmed and meticulously sorted, bunch by bunch. The journey continues in open wooden vats, where the fruit rests in a 7-day cold maceration, unlocking its purest aromas. Fermentation follows at a steady 26–27°C, with gentle extractions over 8 to 12 days to preserve elegance and depth. Then comes a two-week post-fermentation maceration, guided daily by taste and intuition, letting each lot express its unique personality. Finally, the wine is laid to rest in untoasted French oak barrels and large foudres, where it undergoes malolactic fermentation and matures gracefully for 17 months, developing structure, soul, and a story worth savouring.
