Method Magic The grapes are hand picked to ensure the best grapes are selected and minimum damage occurs to each bunches. Indigenous yeasts are used to ferment the wine. The wine is then aged on its lees for 11 months. During this process, the lees are stirred regularly. The wine then undergoes malolactic fermentation. This softens the wine and gives it complexity with creamy and nutty characteristics.
