Method Magic Located in the prestigious Kakheti region, Shilda winery uses famed Georgian grape varieties to craft their exceptional wines. White wine grapes are fermented in 'qvervi', 2-tonne clay amphora that are buried in the earth to maintain a cool, steady temperature. The grapes are fermented with their skins, which impart their character to the juice - tannins for structure, pigments for colour, and a wealth of aromatic compounds. This is how you make wine in Georgia's 8,000 year old tradition! After 3 months the wine is removed from the skins and aged for 3 months in stainless steel before minimal clarification and filtration and bottling. 'Rustaveli' is named after Georgia's celebrated poet, with the intention to honour the country's rich heritage.
