Method Magic Set on a steep, west-facing slope in South Australia's Adelaide Hills, the Protero vineyard has been steadily proving itself since its planting in 1999. Now under the care of Stephen and Fiona Pannell, the site sits at 400 metres above sea level on grey loam scattered with granite—an ideal home for this most discerning of grape varieties. Grapes are destemmed with 40% left as whole berries, then cold-soaked before fermentation in a mix of open-top stainless steel and old oak fermenters. Following gentle pressing, the wine rests in tank for six weeks, undergoes malolactic fermentation in puncheons, and matures further in large oak vats for six months. This careful handling results in a wine defined by balance, clarity and structure. Stephen and Fiona bring a quiet determination to their work—shaped in part by the bushfires that nearly claimed the vineyard in 2019. Their stewardship has allowed this site to not only endure, but to thrive.
