Method Magic At Domaine Pfister in Dahlenheim, eight generations of family know-how meet modern precision under Mélanie Pfister, the first woman to lead the estate and a trained agronomist-oenologist. She has driven the domaine into certified organic farming (since 2021) with biodynamic practices in the vineyards. Their Crémant d’Alsace “Breit” Extra-Brut starts with hand-harvested Chardonnay, Pinot Blanc and Pinot Auxerrois from marl-limestone soils, is whole-cluster pressed and cool-fermented in stainless steel, then made the traditional way with a second fermentation in bottle and aged on its lees for more than 2 years before disgorgement, resulting in a sparkling wine that’s all about purity, precision and seriously stylish Alsatian finesse.
