Method Magic This is a hands-on, no-shortcuts kind of wine. The grapes are picked by hand, fermented with native yeasts, and given a slow, cool ferment that lets the fruit speak loud and clear. A week-long maceration builds texture and quiet intensity before the wine moves between stainless steel and traditional Cretan amphorae, where it rests for a few months, soaking up subtle earthy depth without losing its snap. Malolactic fermentation rounds everything out, while the decision to leave the wine unfined and unfiltered keeps it raw, alive, and full of character. With naturally low sulphur, zero bottle ageing, crisp acidity, and a bone-dry finish, it’s fresh, tactile, and effortlessly drinkable at 13.5%. A modern wine made the old way, sealed and ready to be enjoyed exactly as it is.
