Method Magic The winemaking process for Ontañón Kaori focuses on preserving the purity and aromatic expression of its high-altitude Tempranillo grapes. Harvesting is carried out carefully by hand. Fermentation takes place in stainless steel tanks at controlled temperatures for less than a week to maintain freshness and varietal character. After fermentation, the wine undergoes a maceration period to enhance aroma transfer and structure, followed by micro-oxygenation to stabilize color and soften tannins. Finally, the wine is aged for 12 to 15 months in medium-toasted American oak barrels, which contribute subtle notes of vanilla, coconut, cedar, and spice.
