This Icewine pours a rich golden hue and offers an intensely aromatic bouquet of ripe stone and tropical fruits (think peach, apricot, mango and pineapple). Complexity is added with layers of orange peel, caramel, vanilla and clove spice maybe even hints of white truffle, honeycomb and baked citrus peel. On the palate it is opulent and velvety yet balanced, with generous fruit sweetness beautifully lifted by crisp acidity. Flavours include apricot, citrus, spice and caramelised fruit. A classic, expressive Canadian Icewine with a nice long finish.

Method Magic Inniskillin, founded in 1975 by Donald Ziraldo and Karl Kaiser as the first post-Prohibition winery licensed in Ontario. It is based at its Brae Burn Estate in Niagara-on-the-Lake within the Niagara Peninsula. Inniskillin rose to international prominence after its 1989 Vidal Icewine won the Grand Prix d’Honneur at Vinexpo Bordeaux in 1991. The wine is produced by leaving Vidal grapes on the vine into deep winter until temperatures reach about −10°C. Harvesting often takes place at night to collect the fruit in its naturally frozen form. Pressing happens immediately so that only a small amount of intensely concentrated juice is extracted while the water remains frozen in the press cake. Slow, cool fermentation follows, often partially in French Oak. This helps to preserve the aromatics and balance the wine’s high natural acidity with its concentrated sweetness.
