Grapes like Grenache, Syrah, Carignan, and Cinsault thrive on the sun-drenched slopes of Mont Ventoux, where limestone and red Mediterranean soils give fruit that’s juicy, vibrant, and full of life. Hand-harvested and carefully sorted, the grapes undergo traditional fermentation on the skins in large cement vats before malolactic fermentation and around 10 months of aging in a mix of cement and large oak vessels, building depth without losing freshness.
