Method Magic Winemaker Patrick Ligeron achieved his lifetime goal in 2015 when he purchased 11 hectares of vines in his home region of Jura. He honours the local rich wine heritage while farming organically, producing expressive and sophisticated wines that have become some of our most recommended. This Poulsard is grown in two plots, one facing south-east and one with a warmer western exposure, planted on grey marl and grise upon clay. The grapes are destemmed by hand and macerated for 10 days, before spontaneous fermentation takes place over 13 days, with pump-overs once a day. The result is a gentle but deep extraction, softened by 8 months of ageing in 500l old barrels. The plots are finally blended and matured a further 3 months in stainless steel. The wine remains unfined and unfiltered before bottling.
