Method Magic Crafted from 100% Palomino grapes grown in the chalky albariza soils of Balbaína. After fermentation, the wine is fortified and aged biologically under a veil of flor yeast, which protects it from oxidation while contributing to its characteristic aromatic profile—notes of almond, dough, and saline complexity. The Diatomists project intends to produce fuller, more luscious styles of sherry, as part of bringing out the terroir of specific vineyards in the Jerez 'sherry triangle'.
