This Mezcal has aromas of fresh fig, baked apple, star anise and a hint of paremsan rind. It has great acidity with hints of sweet violet and herbal (tarragon) flavours and slight sandalwood on the finish. This is an extremely difficult Mezcal to make. During the roasting process, the high quality of natural compounds in the Agave Jabali (meaning wild boar) creates a foam. It is a notoriously difficult type of Agave to turn into a Mezcal and really needs the Mexcaleros special experts Rogelio Martinez Cruz, Leopoldino Miranda.
Try in a: Champagne flute or small wine glass and sip, like it is a whisky or brandy.
