Method Magic Produced by the Ciappi family near San Gimignano in Tuscany. The vineyards are on calcareous orchre-rich soils about 210m above sea level. Grapes are hand-picked and gently squashed to get the best juice out without adding the astringent element that comes from the skins. The juice is then fermented in stainless steel vats to retain the freshness and aromas. It is then aged on its lees for 2 months, occasionally stirring. The wine is then clarified and filtered then bottled with minimal intervention. The vineyard is committed to integrated and sustainable viticulture and has been recognised with an “Agriqualità” award.
