Made by winemaking duo Anthi & Matt, this organically farmed Assyrtiko offers an inspired take on Greece’s flagship grape. Fermented partly in wild yeast Acacia barrels, partly cold in stainless steel, it’s both creamy and mouthwatering. Expect oyster shell and rock melon on the nose, followed by ripe lemon and brioche on the palate. Not your classic Santorini, but a seriously pure and distinctive ride.

Method Magic The organically grown fruit hails from Charalaboglou’s high-altitude vineyards in Northern Greece—150 acres of certified organic cultivation on the sun-soaked slopes of Krinida, Serres. Some juice was wild fermented in Acacia wood for texture and complexity; the rest underwent cold fermentation in steel to preserve zing and freshness. The result? Notes of fresh oyster shell and rock melon on the nose give way to ripe lemon and brioche flavours on the palate, with a long, chalky finish, Just 2 acres of vineyard were once the seed of this now-visionary estate.
