Whisky
Whisky is one of the most diverse spirits in the world, ranging from delicate, floral and fruit-driven styles to rich, sherried drams and intensely smoky, peated malts. Scotland may be its historic heartland, but exceptional whisky is now made across the globe, from Japan and India to Australia, England and Taiwan.
At Spy, our whisky selection focuses on distinctive bottles from exceptional producers, including single malts, blended malts, single-cask releases and limited bottlings alongside carefully chosen classics. You'll also find Bourbon, rye and other American whiskeys, making this a collection for exploring both the familiar and the unexpected.

The world of whisky can seem complicated, but a few basic distinctions make choosing a bottle much easier. Single malt, blended malt, Bourbon, rye and grain whisky are made in different ways, while where a whisky is produced, the type of cask used for maturation and the presence of peat can dramatically influence its flavour. From light and fruity to rich and sherried or intensely smoky, exploring these differences is one of the great pleasures of whisky.
What style of whisky do you enjoy?
If you enjoy lighter, fresher whisky, look for bottles with citrus, orchard fruit, floral or gently malty flavours. For something richer, whiskies matured in sherry casks can offer dried fruit, spice, chocolate and nutty character. Peated whisky brings smoke into the picture, ranging from a gentle wisp to the powerful maritime, medicinal character associated with some Islay malts. Cask type, maturation and distillery character all matter, so tasting across different styles is often the best way to discover what you enjoy.
What do the different types of whisky mean?
Single malt whisky is made from malted barley at a single distillery, while blended malt combines malt whiskies from more than one distillery. Grain whisky can be made using other cereals and is an important component of blended Scotch, which combines malt and grain whiskies. Bourbon is an American whiskey made from a mash containing at least 51% corn, while rye whiskey places greater emphasis on rye. These categories describe how a whisky is made rather than how good it is.
Does where whisky comes from matter?
Yes, although origin is only part of the story. Scotland alone produces an enormous range of styles, from elegant Speyside malts to powerful peated whiskies from Islay. Japan has developed its own highly regarded whisky tradition, while excellent bottles are now produced in England, India, Taiwan, Australia and beyond. Climate, ingredients, casks and individual distillery character can ultimately matter as much as the country on the label.
Whisky FAQs
What is the difference between whisky and whiskey?
Both words describe essentially the same spirit; the spelling usually reflects where it is made. Scotland, Japan, Canada and many other countries generally use “whisky”, while Ireland and the United States commonly use “whiskey”. There are exceptions, but the spelling does not indicate a difference in quality or a particular style of spirit.
What is single malt whisky?
Single malt whisky is made at a single distillery using malted barley. “Single” refers to the distillery rather than a single barrel or batch, so a single malt can contain whiskies from several casks and, where permitted, different ages. Scotch single malt must also meet the production and maturation requirements for Scotch whisky.
What is peated whisky?
Peated whisky is made using malted barley that has been exposed to smoke from burning peat during the drying process. This can give the whisky smoky, earthy or medicinal flavours, although the intensity varies enormously. Peat is particularly associated with some Scotch whiskies from Islay, but peated whisky is produced in other regions and countries too.
What is the best whisky for a beginner?
There is no single best whisky for a beginner, but approachable bottles with balanced fruit, malt and gentle spice can be a good place to start. Lighter Speyside or Highland malts, softer blended whiskies and some Japanese whiskies can all be excellent introductions. If you already enjoy smoky flavours, however, there is no reason not to begin with a gently peated whisky.
