Ageing process: Cinsault underwent spontaneous fermentation in cement for 10 days, the racked to concrete tank. The Cabernet went into old oak barrels, for extended maceration for 30 days, then pressed and racked for 8 months before both were blended, and rested for 1 month before bottling.
