The grapes are destemmed by hand and macerated for 10 days, before spontaneous fermentation takes place over 13 days, with pump-overs once a day. The result is a gentle but deep extraction, softened by 8 months of ageing in 500l old barrels. The plots are finally blended and matured a further 3 months in stainless steel.
