In the cellar, gravity does the work! Whole clusters ferment traditionally in concrete vats with a long period of maceration to pull out colour, perfume and, that signature granite edge. Then comes the polish, this wine, the Vieilles Vignes cuvée, spends around 12 months in French oak barrels, adding subtle spice, texture and depth without losing its vibrant fruit core.
