Built from a mix of white varieties such as Semillon, Vermentino, Muscat and Viognier grown in sustainably farmed South Australian vineyards, each component is fermented separately with native yeasts, keeping things raw and expressive. Some parcels spend time on skins for extra grip, colour and aromatics, while others are directly pressed, before everything comes together and rests on fine lees in old, large-format French oak . The grapes are allowed to macerate on their skins for a while to bring out their texture, before ageing for 9 months in 500L puncheons.
